 Raw German Chocolate Cake 
One of our family favorites…pretty high in calories, but healthy for you…just watch portion size : )
Cake mixture:
1 ½ cups raw walnuts (preferably organic) Dash of Sea Salt
12 pitted Medjool Dates, un-soaked (buy whole Medjool dates only that are NOT pitted and pit them your selves)
1/3 cup unsweetened cocoa or carob powder
½ teaspoon vanilla extract (organic)
2 teaspoons water (I use coconut water instead)
1.    Blend walnuts and salt in a food processor until finely ground. Add dates, cocoa powder and vanilla, process until mixture begins to stick together.

      2. Add the water and process briefly. Set Cake mix aside!

Filling:

Coconut Filling- 1 1/4 cups walnuts chopped (I use my food processor and leave the walnuts chunky)
1/4 c. organic agave syrup
1/2 tbs. vanilla extract Dash of Sea Salt
3/4 cup organic raw coconut, ½ can of organic coconut milk (You might need a little more, make sure the coconut is covered and moist, but not too much. You want the coconut to soak up the milk) 
Mix coconut and coconut milk together and set aside. Mix the remaining ingredients together and then add the coconut mixture. Set aside!

Frosting:

1/3 cup medjool pitted dates (about 6-8, remember to pit them yourselves)
1/4 cup agave syrup
Flesh from 1 medium avocado
1/3 cup cacao powder

To make the frosting process the dates and agave syrup in the food processor. Add the avocado and blend until smooth. Add the cacao powder and blend again until smooth.  

Forming the Cake:
Using a Square or rectangle cake pan press ½ the cake mixture into the bottom of pan about ½ inches thick. I use a clear glass pan so I can see my layers. Make sure the cake mixture is pressed firmly in the pan. Then add a layer of the coconut filling. Nezt add another layer of the cake mixture. Last, add the frosting abut ¼-1/2 inch thick or more if you like. (Rob likes to sprinkle Cocoa or carob powder on the top, the kids do not)You can eat it right away but it does taste better if it‘s cold and sits in the fridge overnight. We usually taste is after we make it! J

This is a super easy recipe that I tried the other day. I got the premise form Men’s Health magazine and then put my own spin on it.
Basically what I did was spray a cast iron skillet with organic olive oil and then added 5 eggs one at a time. I then added organic heirloom tomatoes (chopped), organic baby spinach, and parmesan cheese on top of the eggs. I cooked at about a medium heat until the egg whites had set and were firm.  Then I just took the spatula and cut the eggs in sections and plated…
The kids LOVED them and they were delicious and healthy!




The Smith Family Green Shake

Ingredients:
1.     A handful of organic kale ( I like the darker versions)
2.     A handful of organic baby spinach
3.     A scoop of EAS protein powder (vanilla)\
4.     A serving of organic hemp or Rice protein powder
5.     ½ organic avocado (peeled)
6.     A handful of organic blueberries (I use frozen)  
7.     A handful of organic goji berries
8.     A few organic strawberries (I use frozen)
9.     1 organic kiwi (whole)
10.                        1 serving of Maca powder
11.                         A handful of organic cacao nibs
12.                         1 scoop of organic yogurt (I like the Greek or RAW milk version)
13.                         Add about 8-10 oz of organic coconut water

Place ALL ingredients into blender and blend for about a minute or two until all are processed!
